So here is one of my favorite recipes for Spicy Basil Chicken. I love Thai food & especially the way Thai people cook: high heat, few ingredients, and practically no preparation. *bliss*
Ingredients
- 2 Tbs. peanut oil or sesame for stir-frying
- 4-5 cloves garlic, finely chopped or substitute garlic paste
- 1 pack of boneless chicken breast cut into small bite-size pieces
- 5 Thai chillies cut into very thin rounds
- 2-3 tsp. black soy sauce
- 2-5 tsp. of Srirascha Sauce (rooster chili sauce) - depending on how spicy you like it
- 2 Tbs. fish sauce
- 1 cup fresh Thai holy basil or regular basil
- Dash of ground white pepper
- 1 tsp of salt
- 1/2 lime
- 4 Tbs. bean sauce (main ingredient)
- Frozen Asian style vegetables (Can use fresh veg)
Preparation:
Cut chicken into small bite sizes pieces
Chop basil into small pieces and soak in cold water
Instructions
1. Heat wok with oil and sauté garlic in
2. Stir chicken in & when majority is cooked and no longer pink add basil
3. Add soy sauce, fish sauce, lime, salt
4. Stir in vegetables & thai chili peppers
5. Add in bean sauce & Srirascha Chili Sauce
6. Mix together and let simmer on low for 5-7 mins
7. Serve over white jasmine or sticky rice
